Yugo The Bunker: wild flavor in an authentic Japanese environment

Crossing the door of Yugo The Bunker transports you to an authentic Japanese environment in which to experience the unparalleled sensations provoked by the dishes on its menu. Its cuisine, that of chef Julián Mármol, is based on the purity and quality of its ingredients and on an elaboration according to the traditions of the highest Japanese gastronomy.

Who would have thought that the Madrid neighborhood of Las Letras could host a perfect tribute to Japanese haute cuisine in a genuinely Japanese atmosphere. But yes, in San Blas street we find Yugo The Bunker, a restaurant awarded a Michelin Star in 2019 (renewed in 2020 and 2021) with two distinct spaces that transport you to the country of the rising sun. 

The upper part of the restaurant emulates a traditional izakaya tavern, while going down the narrow stairs we enter a secret World War II environment, in the perfect recreation of a Japanese bunker of the time.

Obsession for excellence

Two spaces that have in common the absolute passion for the product, the unconditional love for the raw material that oozes in a menu full of bites that make the senses vibrate. In Yugo’s dishes we will find exclusive and unique cuts of wild fish and products with denomination of origin, selected expressly by the chef and brought from all over the world that reach their full potential at the table.

The Restaurant offers three tasting menus: Iconic, Battleship and Omakase, specially designed by the chef to provide an experience that goes from less to more, seeking perfection and excellence in each dish to provoke unique sensations. 

The Iconic menu brings together, among other bites, a selection of signature nigiris for a wild experience, while in the Battleship menu tasty Gunkan compete to delight in a whole game of variations and contrasts of flavor and texture

The Omakase Menu combines these two classics of Japanese gastronomy with other dishes such as tempura, sashimi (akami, chutoro, toro, sockeye salmon, albino salmon, ora king salmon, hamachi and sea bass) or gyozas to provide an unforgettable experience. 

In addition, adapting to the new times, Yugo The Bunker offers a delivery service and an extensive menu with exclusive recipes specially designed by Julián Mármol to enjoy the YUGO AT HOME experience.

The chef

The passion for Japanese haute cuisine led Julián Mármol, after years of research, to create his personal seal.  A personal seal first in a small place with take away service located in Alcalá street, later in Yugo The Bunker, (his dream come true) and Okasan (more informal version with the same quality).

But this is not the end of the story. Julián Mármol is in love with his profession and tirelessly seeks to amaze with new dishes, new proposals and new projects that will soon see the light of day and that will undoubtedly surprise, even though he has set the bar very high for himself.
